I had the worst sweet tooth today and was just about to go get cupcakes when I decided instead to look online for a mug cake. My MIL made one for my son for his first birthday and it was pretty tasty, so I decided to try it out, and then got a little experimental. What I came up with is absolutely delicious and 100% guilt-free and even HEALTHY! Here are the ingredients:
2 T. almond milk
1/2 banana smushed up
2 T. coconut oil – melted
1/2 t. vanilla extract
1 T. flax seeds
4 T. Ghost Protein powder – I used the chips ahoy flavor
1/2 t. baking powder
1/2 t. cinnamon (optional)
1 T. chopped pecans (optional)
Directions: Melt coconut oil in a mug, add vanilla, smushed banana, and milk. Stir until blended. Add flax seeds, protein powder, baking powder, and pecans and blend until smooth.
Microwave for 60-90 seconds until top appears firm.
I’m not a vegan, but this recipe is vegan and so delicious. I’m going to test out the recipe again and come up with chocolate and apple crisp versions. I’ll post their success in a later post.
